Breakfast Bruschetta

This was a happy accident and one of my new favorite breakfasts. See, I’ve never be fond of breakfast. To me it is greasy, mushy, and repetitive. I’m also not big on sweets (I know, I know, I just discredited myself to over half of you). I love a good brunch though. I think all successful brunches begin with a change of the way you look at breakfast. I love everything about this dish. The whole grain toast, the rich duck fat, the garlic-y, cheese, basil-y pesto, the bright and juicy cocktail tomatoes, and most of all, the little prep and quick cleanup.

Ingredients

  • whole grain bread, toasted
  • 1 tbsp of duck fat (yes, you can buy it on amazon)
  • 4 cocktail tomatoes, diced
  • 2 tbsp of pesto (I know pesto is expensive but you can buy it at Sam’s for $8.99 and it’s actually good)
  • block of Parmesan, shaved (to taste)
  • salt and pepper to taste

Equipment

  • cutting board
  • chef knife
  • toaster
  • spoon(s)
  • sautee pan

Directions

  • Prep out your tomatoes and cheese and lightly salt your tomatoes
    • Note: if you want to get fancy and have a balsamic reduction, toss your tomatoes in it
  • Heat your pan and add the fat
  • Put your toast in the toaster
  • Once the fat is hot, crack 2 eggs into your pan and salt and pepper before flipping them
  • Place cooked eggs (I prefer over easy), on the toast and top with tomatoes and spoon on the pesto
  • Top with shaved Parmesan and enjoy!
